This is the recipe we use to serve up wings at Barefoot Beach Pad, my parents boutique hotel in Cabarete, Dominican Republic.
3 LBS OF RAW CHICKEN WINGS
2 TBS SOY SAUCE
2 TBS MIRIN
2 TBS SESAME OIL
2 CUPS AP FLOUR
SIRACHA SAUCE (DESIRED AMOUNT DEPENDING ON HEAT LEVEL)
3 TBS MANGO JAM (CAN SUBSTITUTE HONEY OR APRICOT JAM)
HALF A STICK OF BUTTER
SALT AND PAPPER
1TBS OF MINCED GARLIC (OR MORE IF YOU LOVE GARLIC)
Cut wings into drumettes and flaps then marinade in the soy, mirin and sesame oil, salt and pepper for art least 20 min.
Dredge the wings and flour. Make sure to dust off as much excess as possible.
Fry the wings to golden brown and place in a bowl lined with a paper towel.
In a frying pan or wok - melt butter, ad garlic, stir in mango jam and finally swirl in siracha sauce.
Remove paper towel from the bowl with the wings and pour the sauce into the bowl.
Toss until the wings are coated, plate and ENJOY! Isabella Gruber video.
