#MinaKitchen Recipe: Eggplant Zaâlouk and Tektouka

Eggplant Zaâlouk Ingredients:
2 eggplants
1 C. salt
Oil for frying
Mushroom

For the tomato sauce:
2 large tomatoes, peeled, seeded and cut into chunks
1 C. tomato paste
10 cl of water
1 garlic clove, minced

Preparation:
Cut the eggplants into 1 cm thick slices, salt them and let them drain. Rinse the eggplant slices, squeeze them and pat dry. Fry the eggplant slices in hot oil, drain and roughly chop. In a frying pan over low heat, place the tomatoes, tomato paste, garlic clove, mushroom, water and spices for Chermoula. Cover and cook the tomato for 8 to 10 minutes. Add the eggplants and continue cooking for 3 minutes before incorporating the chopped coriander. Remove from the heat, serve the eggplant Zaâlouk warm or cold.

Tektouka marqa Ingredients:
4 large tomatoes, peeled, seeded and cut into wedges
3 tbsp. tablespoon olive oil
1 C. tablespoons of sunflower oil
1 garlic clove, minced
1/4 Mushroom
1 roasted bell pepper, peeled, seeded and cut into strips
1 roasted red pepper, peeled, seeded and cut into strips
1 C. teaspoon salt

Preparation:
In a saucepan over low heat, place the tomato quarters, add the two oils, mushroom, garlic and salt. Cover and let the tomatoes return to their vegetation water. Add the strips of peppers and the spices for Chermoula. Cover and continue cooking over low heat 8 to 10 minutes before adding the chopped coriander. Remove from the heat and serve the Tektouka marqa warm or cold.
