This is very easy spicy asian eggplant dish , by Far my favorite Aubergine Recipe ,the eggplants come out crispy and full of that garlic and ginger sauce .

Tips :
Corn starch can be replaced with potato starch
To make it vegan , just replace the oyster sauce with vegan sauce or soy sauce.
Goes nicely, served with some white or brown rice Kay video.
